This first-press junmai from Taikan Shuzo in Yamanashi uses Yamadanishiki grown in the Southern Alps region and is characterized by a delicate mouthfeel, subtle ginjo aroma, and a smooth, mildly dry finish. The brewery draws on pi-water (structurally-altered purified water) for brewing.

The origin of the name "Taikan" is named by "Taikan", which was bitten by a commissioned military person celebrating the future. Sake and crown that were so named to match the celebration. The founding has a history of more than 120 years in 1873. The warehouse is located in the Southern Alps, and in a clean environment. Flexible sensitivity due to youth, polished technique, and teamwork. The teachings of Shingen Takeda, who aimed to build a country in the sum of people, live here.
