Koshino Kanbai
Ishimoto Sake Brewery has been producing Koshi no Kanbai in the Kameda-go area of Niigata City since its founding in 1907, drawing on snowmelt water from the Echigo mountain range and benefiting from the long, cold winters that define Niigata's sake character. The brand name translates as Winter Plum of Koshino, named after the hearty winter plum that blooms on snow-covered branches in January and February, a symbol of beauty and perseverance. The brewery places strong emphasis on low-temperature aging, maturing its standard White Label sake for more than six months and longer products for up to two years, to develop its signature light yet rich flavor.
