Featuring a gentle aroma and a drinking experience that flows smoothly down your throat. Yet, it retains the unmistakable umami of rice. What Sake Mezurashi aimed for is a light, enduring Japanese sake with a subtle yet solid core. Meticulously and accurately polished rice, carefully cultivated koji without overdoing it, slowly brewed at low temperatures to create a sake with minimal acidity. Further aging at low temperatures, waiting for harmony with the fragrance, resulted in the pure and clean flavor that befits its name. Subtle expansion, a soft and smooth texture, and a sharp finish. A new sensation of pure rice ginjo sake that becomes more charming with each sip. "Cool it in the summer and warm up in the winter," it is also recommended to enjoy it in a way that suits the season and is gentle on the body.
