Koikawa Shuzo, established in 1725 in the Shonai region of Yamagata Prefecture, dedicated itself to jizake for three centuries and made a landmark commitment in 2016 to produce exclusively junmai sake. The brewery revived the near-extinct sake rice Kame no O, acquired from the Abe family in the 1980s, and patiently ages its brews in a cool warehouse where umami components develop into a mellow, dry character shaped by meltwater from the sacred Dewa Sanzan mountains.
