Hakubanishiki Shuzo, established in 1906 in Omachi City at the foot of the Northern Alps in Nagano, draws its name from the famous Hakuba mountain peaks visible from the brewery. All rice used has been sourced under contract from local Omachi farmers since 2017, grown at an elevation where winters drop well below minus 10 degrees Celsius, creating an environment that suppresses spoilage organisms and promotes healthy slow fermentation. The brewery's water comes from the Iyari Marsh, the softest of Omachi's many water sources, contributing a crystalline quality described as reminiscent of melted alpine snow.
