Edokaijo is brewed by Tokyo Minato Jozo in Minato Ward, Tokyo, reviving a sake tradition on the same ground where the predecessor brewery Wakamatsuya operated from 1812 until its closure in 1911, a site historically close to the Satsuma clan residence where figures such as Saigo Takamori and Katsu Kaishu held secret talks. The brewery, relicensed in 2016, brews each tank with different yeast strains and methods, creating a range of flavor profiles under a single label that changes with every batch.
