Description

I polished the rice from Tokyo to Daiginjo standard. It is the highest peak of Tokyo Port Brewery, which is all about Tokyo, water, and yeast. The yedo yeast used is older than the association No. 1 yeast, and is an ancient Japanese sake yeast separated in Meiji 31. 4MMP (muscat -like scent) and elegant melon incense that you feel immediately after the mouth. The fragrance comes out refreshingly, and the transparent umami and richness that gradually feels. It is the ultimate one that you want to drink.
