Echizenmisaki is the signature brand of Tanabe Shuzo, founded in 1899 in Eiheiji Town, Fukui Prefecture, and named after the dramatic coastal headlands of the Echizen coastline to express the brewery's pride in its Fukui identity. The brewery steams rice in traditional iron pots fired by natural steam, hand-fills each sake bag for pressing, and cold-matures every bottle, with honjozo aged a minimum of six months and ginjo for at least one year. Producing just 450 koku annually, Tanabe Shuzo brews only special designation sake, strictly limiting its Daiginjo to no more than five small tanks per season.
