A prize-winning Echizenmisaki expression from Tanabe Shuzo in Eiheiji, Fukui, produced in small batches with traditional hand-pressing. The brewery prioritizes at least six months' aging for standard grades and one year for ginjo-class sake, yielding a settled, soft drinking character.
