Description

Yamada Nishiki polished to 40% is pressed in the traditional wooden fune press and then aged for at least one year before release, a house rule applied to all ginjo-grade sake at this small Fukui brewery. The daiginjo genshu is produced in very limited quantities from small fermentation tanks, yielding a rich aroma and smooth texture.
