Echizenmisaki Daiginjo uses Yamada Nishiki polished to 40% from Tanabe Shuzo in Fukui, crafted with ultra-soft water from the Eiheiji mountain watershed. The brewery uses traditional all-tank pressing (fune shibori) and has earned multiple consecutive gold awards at the National New Sake Appraisal; this daiginjo delivers a mellow, rounded mouthfeel with a controlled, elegant ginjo aroma.
