Description

Hyogo-grown Yamada Nishiki polished to 50% is fermented with Fukui yeast No. 801 at low temperature, yielding a mild ginjo aroma and a light, clean palate with a sake meter value of +2. All sake at this Fukui brewery is pressed by the traditional wooden fune method, with this tokubetsu ginjo aged for at least one year.
