Chiyokotobuki is produced by Chiyokotobuki Toraya, a brewery with roots dating to the early 18th century in Sagae City, Yamagata Prefecture, a city shaped by snowmelt from the sacred 1,980-meter Mount Gassan flowing through the Sagae River. The brewery uses locally grown Yamagata rice and water recognized as ideal for ginjo sake brewing, taking time and effort to brew by hand while also supporting the surrounding agricultural community.
