Description

Hiyaoroshi is the autumn-release version of Chiyokotobuki's Dewa Sansan Junmai Ginjo, aged through the summer months and released without a second pasteurization as temperatures cool. Brewed at Sagae, Yamagata with mineral-rich hard water from Mount Gassan's renowned Tohoku aquifer, this seasonal expression develops a rounded, harmonious depth.
