Gassan

Chiyokotobuki Toraya draws on a lineage extending to the early 18th century and has been brewing in Sagae City, Yamagata Prefecture, within a region historically known as the Nada of Tohoku for its sake-producing tradition. The Gassan label is named after the sacred Mount Gassan, one of the three holy mountains of Dewa, and the brewery uses Yamagata Prefecture rice exclusively across all expressions. Flagship products include a junmai daiginjo made with the prefecture's premium Yuki Megami variety, and the brewery has been working to revive the heirloom Toyokuni rice variety, which was once a leading Yamagata cultivar in the Taisho era.
