Yatsushika's nigorizake is an unfiltered cloudy sake from Oita's Yatsushika Brewery, polished to 70% and produced in a style suited to the region's food culture. The brewery draws water from an artesian source 250 meters below the Kusu Basin, and the nigori format retains a portion of the rice lees for added texture and mild sweetness.
