Yamada Nishiki rice polished to 35% is brewed using soft spring water drawn from the Tsukuba mountain system, producing a junmai daiginjo with a balance of fruity aromatic lift and firm rice body. Locally contracted Ibaraki-grown Yamada Nishiki and the brewery's signature low-temperature fermentation contribute to the silky mouthfeel this label is known for.
