Daiginjo made from Hyogo Yamada Nishiki polished to an extreme 38%, brewed using underground water drawn from the Chichibu water system at this Iwatsuki brewery. Light yet refined, with an elegant spread of ginjo aroma and a balanced, dry umami profile. Produced in limited quantities through careful, small-batch handcrafting.
