Kimbo Honjozo is a foundational expression from Kimpo Shuzo in Shimane Prefecture under the Kimbo label, featuring the addition of a small amount of distilled brewer's alcohol to brighten the aroma and create a lighter body. Shimane's brewing history, deeply entwined with the spiritual traditions of the Izumo Grand Shrine area, lends a sense of gravity and tradition to even this accessible grade. The result is a clean, mildly aromatic honjozo suited to everyday drinking.
