Kenshin Tokubetsu Honjozo from Ueno Shuzo in Joetsu, Niigata, is a specially designated honjozo brewed with a small addition of distilled alcohol to sharpen the aroma and lighten the body. The tokubetsu designation indicates a distinguishing feature in the brewing process, such as a lower polishing ratio or a specific rice variety, elevating it above standard honjozo. Niigata's cold climate and soft water produce the brewery's signature clean, dry profile.
