Kenshin Junmai Daiginjo Yamadanishiki is Ueno Shuzo's flagship premium offering, brewed in Joetsu, Niigata, using Yamada Nishiki, Japan's most prized sake rice. The rice is polished to junmai daiginjo standards, typically 50% or below, yielding a refined, elegant sake with floral and fruity aromas characteristic of highly milled Yamada Nishiki. Niigata's exceptionally soft water and cold winters contribute to the clean, precise finish that defines this expression.
