Kitashizuku rice, polished to just 35%, is the sole variety used in this junmai daiginjo from Hokkaido's Kamikawa Taisetsu Sake Brewery, a multi-award winner at the Sapporo National Tax Agency new sake appraisal. The sake shows a pineapple-accented, juicy fruitiness on the nose, with layered sweetness and a clean, vividly fruity acidity framing the finish.
