Kijoshu is produced by substituting sake for a portion of the brewing water during fermentation, a method that concentrates sweetness and depth. Shirataki Sake Brewery's version is polished to 60% and aged for approximately six years, developing a soft, deep rice umami and a rich, sweet character.
