Three rice varieties, Yamada Nishiki, Hinohikari, and Koshihikari, are polished to an extraordinary 20% in this 2020 vintage junmai daiginjo from the historic Hirado peninsula in Nagasaki. Mori Sake Brewery, established in 1895 on the island of Hirado, uses local Nagasaki water and emphasizes a commitment to genuine regional sake production.

創業於明治28年,全品純米釀造。為讓消費者不受標籤術語左右、找到真正喜愛的產品,酒造以吟釀之心釀造,但不使用大吟釀標注。為表現平戶風土,大部分使用產自平戶的山田錦及在平戶梯田種植的食用米(日本晴、越光米、日向光),其中越光米和日向光產自被列為世界遺產的春日梯田。釀造師積極推動無農藥米合作,並已著手兩個無農藥米品牌,以無過濾生原酒出貨,不加水稀釋。
