Emishiki Junmai Daiginjo Yamada Nishiki Koshikagura uses Koshi Kagura (越神楽), a Niigata-bred sake rice, polished to 50% from Emishiki Shuzo in Koka City, Shiga. Founded in 1892, this Shiga brewery's use of a cross-regional rice variety reflects its pioneering spirit , no additives, kimoto starters, traditional pressing , producing a Junmai Daiginjo with Koshi Kagura's distinctive floral character.
