Fujioka Shuzo was established in 1902 in the Fushimi district of Kyoto, one of Japan's most storied sake-producing regions, and was rebuilt from scratch in 2002 after a closure following the death of its third-generation brewer. The Sokuu brand takes its name and character from kanji meaning blue sky, evoking the feeling of relief and openness when looking upward on a clear day. Brewmaster Masaaki Fujioka works exclusively with rice and water, producing even everyday sake with the care typically reserved for daiginjo, and specializes in muroka unfiltered styles that carry a characteristic natural tint.
