Hokuandaikoku is brewed by Hokuan Jozo, founded in 1923 at the foot of the Northern Alps in Omachi City, Nagano Prefecture, celebrating its centenary in 2023. The brewery draws soft water filtered through the granite layers of the Northern Alps over many years, recognized as one of Japan's Top 100 Famous Waters, and uses locally grown rice varieties including Hitogokochi and Kinmon Nishiki. The resulting sake is characterized by gentle umami, a clean mouthfeel, and a graceful sweetness achieved through traditional cold-weather brewing.
