Iwai and Yamada Nishiki rice blended and polished to 50% form this daiginjo from Yoshiokashuzojo in Kyotango, Kyoto. Iwai is a Kyoto Prefecture heritage sake rice, and its combination with Yamada Nishiki at this polishing level produces a layered aroma with slightly dry, firm structure.
