Kassei (active/lively) indicates that living yeast remains in the bottle, meaning the sake continues to evolve after bottling and must be handled with care when opening. The brewery's Tenjingura facility, founded in 1871, brings its Shizuoka yeast heritage to this celebratory, effervescent style.
