Description

Shussejo Junmai Ginjo Homarefuji Nakagumi Nama is a middle-cut (nakagumi), unpasteurized junmai ginjo from Hamamatsu Shuzo in Shizuoka, brewed with the prefecture's own Homarefuji sake rice. The nakagumi extraction draws from the middle portion of the press run, which produces the cleanest, most balanced sake free of the rougher head or tail cuts. Releasing it as nama (unpasteurized) preserves the lively freshness of the Shizuoka yeast fermentation.
