This junmai ginjo from Inoue Shuzo uses the nakadori center-cut fraction, known for its balance and elegance, extracted at the peak of the pressing cycle when neither first-run boldness nor end-press bitterness is present. The muroka unfiltered and honnama unpasteurized treatment preserves the sake's natural aromas and lively texture, amplifying the delicate ginjo characteristics of the center-cut fraction. The combination of refined fraction selection and raw, unfiltered treatment produces a junmai ginjo of particular finesse.
