Description

Iiyama-grown Hitogokochi rice polished to 59% is brewed using natural spring water from the foot of Mount Mizuo in the Nozawa Onsen area of northern Nagano. The same exacting techniques used for daiginjo production are applied across all grades at this brewery, delivering a clean, well-structured junmai with firm umami and a smooth finish.
