Mizuo Kogin is a junmai ginjo using Kinmon Nishiki from Tanakaya Shuzoten in Nagano. Kinmon Nishiki is a heritage Nagano sake rice grown exclusively in Kijimadaira Village; combined with the pure Nozawa Onsen mountain spring water that defines the Mizuo brand, it delivers a floral, lightly fruity ginjo with distinctive regional grain depth.
