Produced by Myoko Shuzo, founded in 1815 in Joetsu, Niigata, this sake is brewed with soft water drawn from the Mt. Myoko mountain system. The brewery's philosophy of 'dignified sake-making' and its use of two proprietary yeasts blended at fermentation are hallmarks of the house style.
