Description

Daiginjo milled to 40% from Hida Homare, Gifu Prefecture's own premium brewing rice, brewed by Hirase Shuzo using Northern Alps subterranean water with just 15° hardness. The ultra-soft water and extreme polishing produce a clear ginjo aroma with firm Hida Homare umami and bright acidity.
