Gohyakumangoku polished to 65% forms the base of this tokubetsu junmai from Hara Shuzo (Koshi no Homare) in Kashiwazaki, Niigata. Part of the Irodori series, it embodies the Niigata tōbetsu junmai style: clean, dry, and gently umami-forward without heaviness.
