Omachi rice, polished to 50%, is used for this muroka namagenshu junmai daiginjo from Sekaiitto in Wakayama. Omachi is known for producing sake with a full, rounded character and fruit-forward acidity; the unfiltered, undiluted approach amplifies these qualities with added freshness and concentration.
