Yamada Nishiki at 60% polishing forms this tokubetsu junmai, Komenoshizuku (droplet of rice), from Sekaiitto in Wakayama. The name evokes a clean, concentrated rice essence, and the sake is brewed with Kino River water to a dry, well-balanced character.
