The ginjo grade requires a rice polishing ratio of at least 60%, and Amabuki's flower-yeast approach imparts delicate floral and fruity aromatic notes that define the brewery's recognizable house style. Rice is grown under the aigamo duck-farming system on the Saga plain, and water comes from the soft springs of the Sefuri range.
