Amabuki Shuzo, established in 1688 in Saga Prefecture, applies its signature practice of fermenting with yeasts cultivated from specific flowering plants, adding a distinctive floral aromatic layer to the inherent depth of Yamada Nishiki. The name attributes the brewing to master rice farmer Yamada Masatoshi, reflecting the brewery's close relationship with its agricultural partners.
