Tamajiman Hiyaoroshi is a junmai ginjo seasonal release from Ishikawa Shuzo in Tokyo, brewed in winter, matured through summer, and released in autumn without additional pasteurization after storage. This single-pasteurization process allows the sake to develop a mellow, rounded character over the summer months while retaining a lively freshness. The autumn release timing makes it a beloved seasonal sake with a smooth, harmonious flavor.
