Koshinotsuru Bessen is a junmai polished to 70%, retaining a higher proportion of the Koshitanrei rice grain for a more robust, earthy character than the brewery's premium tiers. Koshimeijo uses this expression to highlight the rice variety's natural fullness and umami at a modest polish level.
