Tokusen is a table-grade sake from Okazaki Brewing, founded in 1924 near the scenic Chomonkyo gorge in Hagi, Yamaguchi. The kura brews from late autumn through early spring using underground water from the Abu River, with meticulous koji management at the center of its craft.
