Use "Yamada Nishiki from Hyogo Prefecture" for raw rice. It is a highly white brewing to 60%of Ginjo class. If the pleasant flavor that can be reminiscent of a banana spreads quickly, it will disappear neatly with a refreshing sourness like citrus.
