Kaze no Mori ALPHA 6 uses Nara-grown Akitsuho rice polished to 66% and the rare Kyokai No. 6 yeast, brewed in collaboration with Aramasa Brewery (the yeast's originating house) using white koji and a bodaimoto starter. The result is a layered, mineral-driven sake with citrus-bright acidity, soft carbonation, and the deep complexity of a shochu-style fermentation in a junmai frame.
