Kato Kahachiro Shuzo, established in 1872 in Tsuruoka City, Yamagata Prefecture, is rooted in the Ohyama district, a sake-producing area that rivaled Hiroshima's Saijo and Kobe's Nada in regional prestige since the Edo period. The brewery produces Sasanomai as part of its Ohyama range alongside its flagship 'Ohyama' and 'Jusui' labels, upholding a philosophy of listening to the 'sighs and breaths' of fermenting microbes to achieve harmony in each batch. The brewery also invented its own custom fermentation equipment to maintain the elegant aromatics and smooth texture that define the Ohyama style.
