Hiyokutsuru Shuzo, founded in 1895 in Jojima, Kurume City, Fukuoka Prefecture, sits beside the Chikugo River and draws its brewing water from a deep aquifer more than 200 meters underground. Using locally grown and carefully polished sake rice, the brewery pursues a smooth, deep flavor style described as reminiscent of a more unhurried era. The brewery participates annually in the Jojima Sake Festival, one of Fukuoka's beloved sake traditions.
