Description

Bottled as shiboritate-nama (freshly pressed, unpasteurized), this 65%-polished honjozo captures the seasonal vibrancy of new-season pressing. The small distilled-alcohol addition typical of honjozo is kept minimal, and Sase-shiki traditional pressing at this Tochigi brewery yields a clean, lively character.

杉田酒造的酿酒理念是"酿出日本酒该有的味道"。明治初期,初代杉田房吉从新潟县中越移居至此,被当地泉水(中村泉)的优质水质所打动,遂以此为仕込水开始酿酒。仕込水为地下水,水系属"日光山伏流水",座右铭是"工作不惜时间"。
