福光屋创立于1625年(宽永2年),是金泽历史最悠久的酿酒厂。自1960年开始契约栽培,百余年来持续汲取加贺圣峰白山山脚的优质泉水,凭借不断进化的传统酿造技艺,于2001年实现全量纯米酿造。酒造自1959年开展长期熟成清酒研究,如今更积极将多年积累的米发酵技术运用于化妆品及食品开发,并通过直营店和出口活动推广日本清酒文化。
