Description

Hananoka Junmai Daiginjo Kyuugou is produced by Hananoka Shuzo in Nagomi Town, Tamana, Kumamoto Prefecture, using the celebrated Kumamoto Yeast No. 9, a strain isolated in 1953 at Kumamoto's Brewing Research Centre that is prized for its vibrant, low-acid aromatics and vigorous low-temperature fermentation. The brewery was founded in 1902 near Myokenji Shrine, using spring water from within the shrine grounds and Yamadanishiki rice grown entirely within the Kikuchi River basin. All production relies on this locally sourced water and rice, reflecting Hananoka's philosophy that the best ingredient pairing comes from the same watershed.

We, who creates "Hana no Ka" in the mountains of Wazui -cho, Tamana -gun, Kumamoto Prefecture, we are making sake in a 2,000 -year -old rice -making land that has been certified as a Japanese heritage. Rice is all produced in Wasamicho because it is the best compatibility by growing it in paddy fields in the same water area. As the name "Hana no Ka", we aim to be the unique sake that represents a fragrant, gorgeous, gentle, feminine and delicate Wasui -cho.
